My mom made this vegetable dish recently from an old Jackie Olden cookbook.
This is a recipe I never would have tried because one of the ingredients is brandy.
That doesn't really sound appetizing to me.
Go figure though, this dish is amazing.

Fresh Vegetable Casserole

1-1/2 pounds mushrooms, sliced (or half this portion and use sliced carrots for the remaining half)
1 onion
1 tomato, sliced
1 Tablespoon butter
1 Tablespoon flour
1/2 cup sour cream
Juice from 1/2 a lemon
1/2 teaspoon salt
1/8 teaspoon pepper
1-1/2 ounces brandy
1 Tablespoon cut parsley

Layer mushrooms, carrots, onion and tomato.
Make a white sauce with the butter, flour and sour cream.
Add lemon juice and Brandy to sour cream mixture.
Pour over vegetables.
Add salt and pepper.
Sprinkle parsley all over.
Cover.
Bake 350 degrees farenheit for about 45 minutes
